Grappa di Chardonnay

It is obtained from the traditional steam distillation in small copper boilers of the best pomace of Barbera d'Asti produced by Tenuta Sardi. In order to obtain a very soft but decisive grappa, only the "heart" of the distillate is selected, while the first fraction called "head" and the last called "tail" are removed. The "heart" is the most valuable part and it is the great experience to evaluate this important separation. The color is crystal clear for those of Barbera, Dolcetto and Chardonnay, while the aged varieties of wood such as Moscato and Barbera are amber.
